Yeast Extract Ingredients


Yeast extract has been used in preparing bread, bear, wine, etc., since long ago. In combination with distillation, the processes of fermentation underlie the production of ardent spirits. Thanks to its wholesome physiological properties the yeast extract is used in bioengineering. At the present moments it is applied in the production of xylose, ferments, and food additives. The yeast extract is also used for oil decontamination.


Free glutamic acid often represents a part of yeast extract like Monosodium Glutamate. Glutamic acid is made of an acid-base fermentation cycle.


Autolyzed yeast which contains the cell walls includes yeast cell concentrations that are brought to the state of decomposition; so that the yeast’s endogenous digestive enzymes split proteins into such compounds as amino acids and peptides.


Yeats autolysates are used in preparing of such food items as Vegemite, Marmite, Promite, Oxo, Vitamin-R and Cenovis. When preparing Vegemite and Marmite, sodium chloride is added to the yeast suspension. Thus the solution becomes hypertonic and in the issue the cells shrivel. This process leads to autolysis which is shown in the yeast self-destruction. Next the process implies the heating of dying yeast cells and following separation of yeast with thick cells.


As concerns Hydrolyzed extract, it is widely as food additives for flavoring purposes. In this case exogenous enzymes are applied for hydrolyzing the proteins. Yeast extract hydrolysate from Saccharomyces cerevisiae is very effective in preventing bacterial diseases in plant as well. It strengthens the plant’s natural defense reactions. The active ingredient which is a part of yeast extract hydrolysate includes first of all nutrients, such as minerals and vitamins. It is derived from Baker’s yeast extract which in its turn is used as an enhancer for soups, fruits, etc. It is worth mentioning that the yeast extract is very rich in Vitamin B group, therefore people consume it in the form of food additives and nutritional supplement.
